La parcela tiene\u00a0 denominaci\u00f3n propia de pago y sus siete hect\u00e1reas est\u00e1n plantadas, exclusivamente, con <em>chenin blanc<\/em>. Los suelos son de esquisto y las vi\u00f1as son trabajadas \u00fanicamente con tracci\u00f3n animal y con preparados vegetales.<\/p>\n<p>El vi\u00f1edo pertenece a Nicolas Joly, el gran referente de la viticultura biodin\u00e1mica. Siguiendo los pasos de Rudolf Steiner, Joly comenz\u00f3 con la agricultura biodin\u00e1mica en 1980 y desde 1984 todos sus vi\u00f1edos se cultivan seg\u00fan esta metodolog\u00eda. Al respecto ha escrito varios libros, siendo especialmente c\u00e9lebres \u201c<em>El vino del cielo a la tierra\u201d<\/em>, \u201c\u00bfQu\u00e9 es el vino biodin\u00e1mico?\u201d y \u201c<em>Desmitificando el vino biodin\u00e1mico<\/em>\u201d.<\/p>\n<p>Adem\u00e1s de la vinificaci\u00f3n natural seg\u00fan los criterios biodin\u00e1micos, Joly no utiliza levaduras seleccionadas, ni productos qu\u00edmicos, tampoco chaptaliza, sino que tan solo a\u00f1ade un m\u00ednimo de sulfuroso en el momento del embotellado. El resultado es un vino natural, sumamente complejo, que ofrece un sinf\u00edn de matices dependiendo del d\u00eda de apertura. El propio Joly recomienda abrir el vino con dos o tres d\u00edas de antelaci\u00f3n y asegura que el vino no se oxida si se deja el vino abierto varios d\u00edas, incluso mejora.<\/p>\n<p>La Coul\u00e9e de Serrant es uno de esos vi\u00f1edos m\u00e1gicos que encandilan nada m\u00e1s pisas su suelo y la vista recorre cada uno de los rincones de la ladera donde se asienta.<\/p>\n<p>La \u00faltima vez que estuve all\u00ed comimos frente al vi\u00f1edo. En una peque\u00f1a loma que hay detr\u00e1s de la casa. Una mesa y varias sillas rodeadas de vi\u00f1as. Hab\u00edamos comprado algo de fiambre, pan y fruta. Por supuesto, llev\u00e1bamos varias botellas de vino. Seguramente, habr\u00eda alg\u00fan buen restaurante en la zona, pero no creo que en ninguno hubi\u00e9ramos comido lo a gusto que lo hicimos all\u00ed. Poco despu\u00e9s, de forma improvisada, apareci\u00f3 Nicol\u00e1s Joly y estuvimos charlando con \u00e9l. Nos dio una peque\u00f1a <em>masterclass<\/em> sobre biodin\u00e1mica que hizo que aquel d\u00eda fuera a\u00fan m\u00e1s inolvidable. Porque en el mundo del vino las cosas suceden as\u00ed, sin m\u00e1s y sin preverlas. Los astros acaban aline\u00e1ndose entre aquellos que rezumamos pasi\u00f3n por el mundo enol\u00f3gico. Cada uno puede ser de una parte del globo, incluso tener trabajos dispares, pero el vino une y crea un halo m\u00e1gico que hace que todo sea sencillo.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>La Coul\u00e9e de Serrant se remonta al siglo XII por los monjes cistercienses, plantados desde entonces.
