In un certo senso esiste un rapporto intimo tra gli aromi e i sapori del vino, poich\u00e9 i primi si riflettono nuovamente quando il vino entra in bocca, ma la vera fase gustativa \u00e8 data, nello specifico, da cinque sapori: dolce, salato, amaro, acido e umami. Andiamo con loro.<\/p>\n\n\n\n<p>Il sapore dolce \u00e8 dato dallo zucchero residuo al momento della fermentazione ed \u00e8 logicamente tipico dei vini dolci, ma bisogna tenere presente che esistono vini secchi che, per la variet\u00e0 dell&#8217;uva, la sua produzione o l&#8217;epoca della vendemmia , , possono anche avere un pizzico di dolcezza. Questa caratteristica pu\u00f2 essere trovata nelle variet\u00e0 di terpeni bianchi.<\/p>\n\n\n\n<p>La salsedine, anche se non sembra, \u00e8 relativamente comune e la troviamo soprattutto nei vini dell&#8217;Atlantico. Gli albari\u00f1os di R\u00edas Baixas ne sono un buon esempio, cos\u00ec come i txacol\u00eds e anche i vini di Sanl\u00facar e El Puerto de Santa Mar\u00eda. La vicinanza dell&#8217;Oceano Atlantico si riflette in molti dei vini.<\/p>\n\n\n\n<p>L&#8217;amaro, in particolare, lo associo pi\u00f9 a un modo di realizzarlo non proprio bello che a un vitigno. Questo deriva dai tannini, provenienti dalla buccia, dai semi e dai gambi.<\/p>\n\n\n\n<p>L\u2019acidit\u00e0 \u00e8 sempre fondamentale in un buon vino. Un vino senza acidit\u00e0 tende ad essere pesante. Il freddo, il corretto utilizzo del raspo e, ovviamente, la variet\u00e0 dell&#8217;uva, sono i determinanti di questa acidit\u00e0. Lo Chardonnay, soprattutto di Chablis, lo chenin blanc della Loira o il riesling della maggior parte della Germania ne sono ottimi esempi.<\/p>\n\n\n\n<p>Infine l&#8217;umami, il cosiddetto quinto sapore. Queste note di ferro, sangue, soia o curry sono caratteristiche di un buon numero di vini. Possiamo trovare l&#8217;umami in molti vini Sangiovese, in Toscana, nel Nebbiolo piemontese, nel Grenache e nel Carignan del Priorat.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Il gusto \u00e8 l&#8217;ultima fase dell&#8217;analisi sensoriale del vino. Oltre agli aromi, in bocca si manifestano cinque sapori fondamentali: la dolcezza dello zucchero residuo, il sapore salato tipico dei vini atlantici, l&#8217;acidit\u00e0 che conferisce freschezza, l&#8217;amarezza dei tannini e l&#8217;umami, con le sue sfumature speziate e minerali. Ognuno di essi conferisce carattere e profondit\u00e0 al
