Chaque verre est une le\u00e7on de chimie sensorielle.<\/p>\n\n\n\n<p>Dans le vin, l&#8217;\u00e9thanol est la substance la plus abondante apr\u00e8s l&#8217;eau. Tout commence par la fermentation alcoolique, une danse microscopique entre le sucre et les levures (Saccharomyces cerevisiae).<\/p>\n\n\n\n<p>L&#8217;\u00e9quation magique est la suivante : C6 H12 O6 \u21922 C2 H5 OH+2 CO2<\/p>\n\n\n\n<p>Les levures transforment le sucre en alcool, plus pr\u00e9cis\u00e9ment en \u00e9thanol et en dioxyde de carbone, lib\u00e9rant \u00e0 leur tour des acides organiques, des sucres r\u00e9siduels, des polyph\u00e9nols, des acides amin\u00e9s et des mol\u00e9cules aromatiques. Cette fraction minoritaire est responsable de la structure, de la couleur, de la stabilit\u00e9 et du profil sensoriel de chaque vin et explique pourquoi chaque bouteille constitue un syst\u00e8me unique.<\/p>\n\n\n\n<p>Apr\u00e8s la fermentation alcoolique, les bact\u00e9ries lactiques (Oenococcus oeni) entrent en jeu et transforment l&#8217;acide malique en acide lactique, plus rond et plus doux. Il en r\u00e9sulte un vin plus agr\u00e9able, avec des notes de beurre ou de cr\u00e8me, dues \u00e0 la pr\u00e9sence de diac\u00e9tyle.<\/p>\n\n\n\n<p>Les polyph\u00e9nols sont les artistes du vin. On les trouve principalement dans les peaux, les p\u00e9pins et le bois de ch\u00eane, et ils d\u00e9terminent la couleur, l&#8217;astringence et le potentiel de garde.<\/p>\n\n\n\n<p>Les anthocyanes sont des pigments responsables de la couleur rouge, qui varie en fonction du pH : s&#8217;il est faible, ils donnent des tons rouges vifs, tandis que s&#8217;il est \u00e9lev\u00e9, ils donnent des tons bleut\u00e9s.<\/p>\n\n\n\n<p>Les tanins, quant \u00e0 eux, sont des polym\u00e8res ph\u00e9noliques qui se combinent avec les prot\u00e9ines de la salive, provoquant une sensation de s\u00e9cheresse ou d&#8217;astringence. Au cours du vieillissement, ils se polym\u00e9risent, devenant plus doux et plus ronds.<\/p>\n\n\n\n<p>Le bouquet du vin provient de centaines de compos\u00e9s volatils qui \u00e9voluent avec le temps. Dans les f\u00fbts de ch\u00eane, la chimie devient parfumeuse, la lignine et l&#8217;h\u00e9micellulose se d\u00e9gradent sous l&#8217;effet de la chaleur du toastage, lib\u00e9rant de la vanilline (ar\u00f4me de vanille) et du furfural (amande grill\u00e9e).<\/p>\n\n\n\n<p>Le vin n&#8217;est pas seulement une question de culture, c&#8217;est aussi une question de chimie sensorielle. La fermentation transforme le sucre en alcool ; la fermentation malolactique transforme l&#8217;acidit\u00e9 agressive en douceur ; les polyph\u00e9nols colorent, structurent et prot\u00e8gent ; et les ar\u00f4mes \u00e9mergent, \u00e9voluent et se transforment avec l&#8217;\u00e2ge. Chaque bouteille renferme le travail de millions de mol\u00e9cules en parfaite harmonie.
