Ogni bicchiere \u00e8 una lezione di chimica sensoriale.<\/p>\n\n\n\n<p>Nel vino, l&#8217;etanolo \u00e8 la sostanza pi\u00f9 abbondante dopo l&#8217;acqua. Tutto inizia con la fermentazione alcolica, una danza microscopica tra lo zucchero e i lieviti (Saccharomyces cerevisiae).<\/p>\n\n\n\n<p>L&#8217;equazione della magia \u00e8: C6 H12 O6 \u21922 C2 H5 OH+2 CO2<\/p>\n\n\n\n<p>I lieviti trasformano lo zucchero in alcol, pi\u00f9 precisamente in etanolo e anidride carbonica, liberando a loro volta acidi organici, zuccheri residui, polifenoli, aminoacidi e molecole aromatiche. Questa frazione minoritaria \u00e8 responsabile della struttura, del colore, della stabilit\u00e0 e del profilo sensoriale di ogni vino e spiega perch\u00e9 ogni bottiglia costituisce un sistema unico.<\/p>\n\n\n\n<p>Dopo la fermentazione alcolica entrano in gioco i batteri lattici (Oenococcus oeni) che trasformano l&#8217;acido malico in acido lattico, pi\u00f9 rotondo e morbido. Il risultato \u00e8 un vino pi\u00f9 gradevole, con note di burro o panna, dovute alla presenza di diacetile.<\/p>\n\n\n\n<p>I polifenoli sono gli artisti del vino. Si trovano soprattutto nella buccia, nei semi e nel legno di rovere e determinano il colore, l&#8217;astringenza e il potenziale di invecchiamento.<\/p>\n\n\n\n<p>Gli antociani sono pigmenti responsabili del colore rosso, che varia a seconda del pH: se \u00e8 basso conferisce tonalit\u00e0 di rosso brillante, mentre se \u00e8 alto conferisce tonalit\u00e0 bluastre.<\/p>\n\n\n\n<p>I tannini, invece, sono polimeri fenolici che si combinano con le proteine della saliva, provocando una sensazione di secchezza o astringenza. Durante l&#8217;invecchiamento, si polimerizzano, diventando pi\u00f9 morbidi e rotondi.<\/p>\n\n\n\n<p>Il bouquet del vino nasce da centinaia di composti volatili che evolvono nel tempo. Nelle botti di rovere, la chimica diventa profumeria: la lignina e l&#8217;emicellulosa si degradano con il calore della tostatura, liberando vanillina (aroma di vaniglia) e furfurolo (mandorla tostata).<\/p>\n\n\n\n<p>Il vino non \u00e8 solo cultura, \u00e8 chimica sensoriale. La fermentazione trasforma lo zucchero in alcol; la malolattica converte l&#8217;acidit\u00e0 aggressiva in morbidezza; i polifenoli colorano, strutturano e proteggono; e gli aromi emergono, evolvono e si trasformano con l&#8217;invecchiamento. Ogni bottiglia racchiude il lavoro di milioni di molecole in perfetta armonia.
